Yellowfin tuna is one of the most versatile fish in contemporary cuisine, and is enjoyed all over the world. A more sustainable fish by nature, our yellowfin tuna is responsibly sourced, and can be found throughout the menu.
Our yellowfin tuna is sourced from the warm waters of the Pacific in what's known as the Coral Triangle. Nearly one-fifth of the world's yellowfin tuna is both found and caught here. The Coral Triangle is an eco-system full of life, teaming with hundreds of coral reefs and thousands of fish species. Unfortunately, due to overfishing and harvesting, sustaining marine life in the area has become challenging and is putting its coastal community in jeopardy.
The yellowfin tuna served at Seasons 52 is responsibly sourced by a fishing cooperative called the Fishing & Living Initiative. Caught using the handline fishing method, the environmental impact of the cooperative is low. Handline fishing is a traditional method passed down from generation to generation, requiring one fisherman, armed with a single fishing line, to lure one fish at a time. Although simple and artisanal, it requires an incredibly skilled and able practitioner to locate the schools of fish and bring in a substantial catch.
MEET DELI
Mr. Deli has many stories from the sea. As a third-generation handline fisherman, Mr. Deli learned everything he knows from his father and grandfather. Fishing has provided for his family for many years and all of his children attend school and two are studying medicine. He expresses the rush of catching a big fish: “Catching a large tuna is an amazing feeling, even if you end up losing it again off the hook! The adrenalin rush is…indescribable. So, if I lose him off the hook it makes me that much more motivated to find him again and catch him!”
MEET CAPTAIN TOLA
As captain, sustainable fisherman and above all father of five, Mr. Tola's first priority is his family and making sure his children attend school in Sulawesi, Indonesia. Sometimes out at sea for 12 to 20 days at a time, he brings back high quality catches of handlined tuna to support his family and way of life. A fisherman of 22 years, Mr. Tola shares the simplicity of this sustainable fishing method: "We need only our muscle, fishing line, and one hook... I want to catch good grade large tuna and get back to my family quickly."
Using the sustainable handline method, the fishing villages that bring in Seasons 52 yellowfin tuna are able to avoid by-catch and the incidental deaths of other marine life, like sea turtles and dolphins. To further promote sustainability, companies like Anova and the international Fishing & Living Initiative support community development through clean water programs, fishery improvement, and developing local schools. Because fishing is the bedrock of their livelihoods, conserving tuna populations for future generations is a must for these communities, and another great reason behind bringing in the catch one big fish at a time.
