GIVE YOUR CORN SOME POP THIS SEASON
This season use Chef Pleau’s effortless method for intensifying flavor and preserving nutrients and you’ll never boil corn again. Boiling fresh corn mutes flavor and saps nutrients. Chef Pleau suggests roasting it in the oven and finishing on the grill to better concentrate corn’s naturally rustic sweetness. During oven roasting, keep the husk in tact to retain moisture and flavor. Just before serving, whisk on a few brushstrokes of extra virgin olive oil, a sprinkle of salt and pepper and finish on the grill for caramelized corn perfection. For final punch, add a colorful, zesty roasted red pepper sauce for dipping.

THIS RED CAN TAKE THE HEAT
Cherries, strawberries and cloves followed by a minerally kick, read up Gamay; a wine classic made for summer. Master Sommelier George Miliotes brings his latest discovery to the wine list with the debut of Jean-Paul Brun L’Ancien Vieilles Vignes Beaujolais, Gamay. The heavy granite soil of Beaujolais lends a dark earthiness to this wine that nicely balances the ripe cherry fruit. Light on its feet with a charming balance, the classically tempered Brun tastes lovely when slightly chilled. Serve it as an ideal pairing with a broad range of summer cuisine and summer temperatures.
