The legendary grilled turkey tenderloin skewer returns to the summer menu. Basted in a savory tamarind glaze, Chef Clifford Pleau makes clever use of exotic spices to evoke layers of flavor and lend a decadent note to this grilled favorite. Working with summer’s bounty, Chef Pleau also weaves fresh contrast into grilled dishes, combining the spicy crispness of wild organic arugula with sweet grilled golden beets or the zest of lemongrass with grilled pineapple and salmon.
